Easiest way to make a Veggie Soup

Here’s a simple recipe for vegetable soup:



1. Preheat your soup pot with olive oil.
2. Sauté onions and carrots until golden.
3. Add celery, canned tomatoes, broth, potatoes, green beans, and bay leaves.
4. Season to taste with salt and pepper.
5. Simmer for 25 minutes.
6. Add corn, sweet peas, green onion, and parsley.
7. Simmer for an additional 5-8 minutes then serve.



You can also add other vegetables like broccoli, cauliflower, sweet potatoes, spinach, kale, zucchini, beets, asparagus, bok choy, broccoli rabe, cabbage, and leeks . You can also swap out vegetable broth for chicken or beef broth to make the soup taste heartier.
